Rolled Coconut Koeksisters

On the Easter Weekend Change Matters went to Uitenhage to visit a friend who comes from a large family and a different cultural background. The kitchen seemed the perfect meeting place to exchange news, views and a way to integrate who you are with the rest of the people who were either family members or who were also visiting on this occasion

The activity that assisted this ‘melting pot’ of many cultures was cooking together and exchanging recipes

One such recipe exchange was that Change Matters got to learn how to make Koeksisters Rolled in Coconut – Thanks to Najwa, Salmie, Rugaya and Carmilla for your patience and assistance.


2 Eggs
Milk (Optional)
1 x 500gm of Self Raising Flour
1 Cup of Cake Flour
1 pkt of Dried Yeast
3 Medium Potatoes
125gm of Butter
¼ Cup of Sugar
Ground Cinnamon, Ginger, All Spice and Cloves (about a dessert spoon)
Cardamom and Aniseed Seeds (about a dessertspoon)


Peel, boil and bash the potatoes
Add butter
Mix in 2 eggs when potatoes have cooled down a bit – you don’t want scrambled eggs

Add to dry ingredients
Add milk if dough is too dry
Mix altogether – the dough must have the consistency of bread dough

Cover bowl with cloth and allow dough to rise
Roll dough into a large sausage
Cut sausage into pieces and shape into mini sausages but flatten the top and bottom
Cover and leave for a while

Fry in deep sunflower oil using a fryer until darkish brown

Make Syrup with 2 cups of sugar and one-and-a-half cups of water

Dip Koeksisters into the Syrup and coat thoroughly then roll in desiccated coconut.
